Granola
This granola is great sprinkled over yogurt. Its not very sweet, but goes well with a sweetened yogurt (So Delicious is our favorite non-dairy option). If you prefer it sweeter, add more honey or maple syrup, or add in some granulated or brown sugar
2 cups old fashioned oats
½ cup plus 2 Tablespoons sunflower seeds (roasted, unsalted)
¼ cup flax seeds
2 Tablespoons chia seeds (optional)
½ cup sliced almonds (optional)
2 Tablespoons butter
4 teaspoons coconut oil
2 Tablespoons honey
1 Tablespoon maple syrup
½ Tablespoon vanilla extract
½ teaspoon salt
1 teaspoon cinnamon
½ cup raisins
Preheat the oven to 325°F. Grease a large baking sheet with oil or nonstick cooking spray.
Combine oats, seeds, and almonds in a large bowl.
Place vegan butter and coconut oil in a microwave safe container and microwave in ten second intervals, stirring between each, until melted.
Add honey and maple syrup to the melted oil and butter. Stir to combine. Drizzle over the oat mixture.
Add vanilla, salt, and cinnamon to the oat mixture and mix thoroughly to coat the oats, seeds, and nuts with liquid.
Spread the mixture in a thin layer on the baking sheet. Bake for 10 minutes. Remove from oven and stir. Bake another 8 minutes. Remove from oven, add raisins, and stir. Let cool in the pan until room temperature. Store in an airtight container.
